Gruyère is named after a Swiss village. It is traditional, creamery, unpasteurised, semi-soft cheese. The natural, rusty brown rind is hard and dry. The cheese is darker yellow than Emmental but the texture is more dense and compact. Slightly grainy. The cheese has a wonderful complexity of flavours- at first fruity, later becomes more earthy and nutty. You’ll find Gruyère listed in recipes for potato and vegetable gratins, quiches, fondue and other cheese-based dishes. Gruyère has the AOP (Original Swiss) trade mark.
The official quality marks AOP and PGI are reserved for traditional products with deep-rooted regional origins. Once protected designations have been registered by the Swiss Federal Office of Agriculture, they may only be used for products that meet the specified requirements regarding origin, production and quality. Independent certification centres check that these standards are adhered to.
