The Edam was first produced in the Netherlands and named after the town in which it is made. Edam has a pale yellow interior and a crust of red paraffin wax. Its flavour is mild, slightly salty and nutty. Edam goes very well with fruits like peaches, apricots cherries and melons and is also eaten with crackers. Edam goes well with drinks like Pinot Gris, Dry Riesling, Champagne and Shiraz.
